There’s No Place Like Home for Romance!

Some of the most intimate and romantic dates are at home with the two of you nestled in front of a roaring fireplace (inside or outside) while sipping on your favorite drink. Appetizer

Cheddar Cheese Crisps

Swing by Kudzu Bakery, grab their famous, frozen Cheddar Cheese Crisps. Pull out of freezer, slice into 1/8 inch slices, and bake 15 minutes. Voila…quick and delicious.


Main Course

Filet of Beef (Serves 8 to 10)

Leftovers make great sandwiches.

  • 1 whole filet of beef (4 to 5 pounds), trimmed
  • 2 tablespoons unsalted butter at room temperature
  • 1 tablespoon Kosher salt
  • 1 tablespoon coarsely ground black pepper

Preheat the oven to 500 degrees. Place the beef on a baking pan and pat the outside dry with a paper towel. Spread the butter on with your hands. Sprinkle evenly with the salt and pepper. Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare. Remove the beef from the oven, cover it tightly with aluminum foil and allow it to rest at room temperature for 20 minutes. Slice the filet thickly.

  • ½ cup finely chopped sweet onion
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup uncooked Arborio rice (short-grain)
  • 2 ¾ cups low-sodium chicken broth
  • ¼ cup dry white wine
  • ¼ cup freshly grated Parmesan cheese
  • ¼ to ½ cup low-sodium chicken broth
  • Salt and pepper to taste

Preparation

1. Stir together first 4 ingredients in a medium-size microwave-safe bowl. Microwave on HIGH 3 minutes. Stir in rice, and microwave at HIGH 2 minutes.

2. Stir in 2 ¾ cups broth and ¼ cup wine. Cover tightly with plastic wrap. (Do not vent). Microwave on HIGH 9 minutes. Carefully swirl bowl without uncovering (to incorporate the mixture), and microwave on HIGH 8 minutes. Carefully remove and discard plastic wrap. Stir in cheese and ¼ cup chicken broth, stirring 30 seconds to 1 minute or until creamy. Add ¼ cup additional broth, 1 Tbsp. at a time, if necessary, for desired consistency. Season with salt and pepper to taste, and serve immediately. Makes 4 servings; Prep: 10 min., Cook: 29 min.

Brussel Sprouts with Pancetta

Brussel Sprouts with Pancetta

  • 1 ½ pounds Brussels sprouts, trimmed
  • and cut in half through the core
  • 4 ounces pancetta, ¼-inch-diced
  • ¼ cup good olive oil
  • 1 ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon syrupy balsamic vinegar

Preparation

Preheat the oven to 400 degrees. Place the Brussels sprouts on a sheet pan, including some of the loose leaves, which get crispy when they’re roasted. Add the pancetta, olive oil, 1 ½ teaspoons salt, and ½ teaspoon pepper, toss with your hands, and spread out in a single layer. Roast the Brussels sprouts for 20 to 30 minutes, until they’re tender and nicely browned and the pancetta is cooked. Toss once during roasting. Remove from the oven, drizzle immediately with the balsamic vinegar, and toss again. Taste for seasonings, and serve hot.

Some say chocolate is a romantic trigger when paired with a wonderful glass of red wine or cappuccino. If you have never tried the triple chocolate mousse torte from Croissants Bistro and Bakery, you are missing a treat. Stop by and buy a whole torte or just a few slices, top with strawberries or raspberries for an incredible dessert you will enjoy.

Personally, I am a pound cake lover from the days when my Mama made them from scratch. The closest I can find, and may perhaps even tops Mama’s, is the fabulous pound cake from Priceless Desserts. Whether you eat it plain or topped with real whipped cream and fruit, there is nothing finer. And you can heat it up the next morning with a cup of coffee to begin the romance all over again!
