Cherry Sour

INGREDIENTS:

CHERRY SIMPLE SYRUP

  • 1 ½ cups fresh or frozen cherries
  • 1 cup water
  • 1 cup granulated white sugar
  • ½ tablespoon lemon juice
  • ¼ teaspoon almond extract( you can leave out if you’d like)

COCKTAIL

  • 2oz / 60 ml London Dry Gin
  • 1 oz / 30 ml Cherry Simple Syrup
  • 1 oz / 30ml Fresh Lemon Juice
  • ½ an egg white (or ½oz unsalted aquafaba)
  • Ice

INSTRUCTIONS:

CHERRY SIMPLE SYRUP 

Place the cherries, sugar, water, and lemon juice in a medium saucepan. Bring to a simmer over low-medium heat and stir until the sugar is dissolved. Use a wooden spoon or potato masher to smash the cherries as they cook. Allow the mixture to continue to simmer for 8 to 10 minutes until the fruit has broken down. Remove from heat, and allow the mixture to cool for 10 to 15 minutes or longer if desired. Pour the mixture through a mesh sieve to remove the fruit pieces. 

COCKTAIL 

Put all ingredients without ice into a shaker and shake vigorously. Then add ice and shake again! Strain into a beautiful glass! Garnish with fresh cherries.
